Visitors will be able to get acquainted with the culinary traditions of different regions of Russia, as well as other countries – England, Belgium, Spain or Turkey.
The secrets of preparing original and tasty dishes will be revealed by the chefs of the Summer in the City gastronomic project. From 5 to 8 August, two sites will operate in the center of Moscow – on Tverskaya Square and Revolution Square. The remaining 16 will be located in other districts of the capital.
Unusual desserts prepared according to original and old recipes, as well as a special restaurant menu, will be offered to residents of the capital more than 50 enterprises trade and catering.
At the fairs it will be possible to taste not only dishes from different regions of Russia, but also from other countries – England, Belgium, Spain, Italy, Turkey, Japan.
Crispy chicken and fragrant pilaf
On August 7, Saturday, at the address: Gorodetskaya Street, possession 1, from 16:00 to 19:00, Jerk Chicken Wings will be cooked. You can find the sparkle of Jamaica in this dish: it is spicy and sweet at the same time. First, the chicken is in a special marinade for about a day, and then it is fried. The fire brings the aged meat to perfect condition in a matter of minutes. A crispy, tangy and dark crust is a sure sign of Jerk Chicken Wings. The chicken is removed from the heat, cut into portions and served in craft paper.
On the same day, from 15:00 to 17:00, you can witness the preparation of the best dish for a hot summer – pilaf with fruit (Matveevskaya street, possession 2). It is made according to an unusual recipe, adding dried apricots, apples, raisins, barberry and prunes as it cooks. And at the very end – apple juice, honey with nuts. The pilaf is crumbly, and the amber rice is both sweet and spicy.
Delicious appetizer and quail in a spicy sauce
On August 7 and 8, on the boulevard in the 16th microdistrict of the Kryukovo district, from 14:00 to 16:00, visitors will be offered grilled pumpkin with raw smoked bacon. First, cut the pumpkin into slices, then mix oil, salt, chopped garlic in a deep bowl and rub the slices on both sides, then wrap the pumpkin with strips of raw smoked bacon. All that remains is to grill the pieces.
On August 7, in the Brigantina Park on Koptevsky Boulevard, from 15:00 to 18:00, chefs will cook quail on birch charcoal with cherry sauce. Tender poultry meat and the aroma of a campfire are the perfect combination, and the signature sauce will add spice to the dish. Before cooking, dry the quail with a towel and add your favorite spices. Any cherry will work for the sauce. At the first stage, puree is made from it using a blender. Then honey and cinnamon, salt, pepper, sugar and spices are added to it to taste. Next, the sauce is brought to readiness in a saucepan. After that, it remains only to lay out the quail and pour the sauce over it.
Seafood and mini burgers
On August 6 from 19:00 to 21:00 and on August 8 from 14:00 to 18:00 on the boulevard in the 16th microdistrict of Kryukov there will be a day of shrimp cooked with pineapple and teriyaki sauce. Shrimps and pineapple are fried in special fire bowls until golden brown, laid out on a rice pillow, and poured over with homemade teriyaki sauce. It is done as follows: soy sauce with sugar and honey is heated in a saucepan over low heat, then a little wine vinegar and garlic are added there. The mixture must be mixed well until thickened.
On the same site, on August 8, from 14:00 to 18:00, visitors will find mini-burgers in Asian style with a crab and shrimp cutlet with sweet and sour sauce and lemongrass seasoning. The durum wheat bun is pre-baked in the oven. Cutlets are made from homemade minced meat. It requires crab meat and peeled shrimp with the addition of onions, cheddar cheese, eggs and bread crumbs.
A bun is heated on a fire bowl and a cutlet is fried. Then a cutlet, tomatoes, cheese, finely chopped pineapples and bell peppers are placed inside the bun, all this is poured with sweet and sour sauce. It is prepared as follows: tomato puree, soy sauce, freshly squeezed orange juice, sugar and vinegar are mixed in a saucepan over low heat, then a little pre-mixed flour with water and lemongrass seasoning are added. The mixture is brought to a boil. After that, with gradual cooling, the sauce reaches a thickening.
Roasted melon and simmered pineapple
On August 7, on the Revolution Square from 15:00 to 17:00, fried melon in bacon will be cooked. A piece of melon is wrapped in the most delicate bacon and placed on a hot surface. The melon simmer over the fire for about three minutes, until the bacon is fried to a crispy, aromatic crust.
Visitors will also be delighted with pineapple in its own juice, simmered over the fire, and rice in a wok with chicken. To prepare the first course, pineapple is put on a Brazilian skewer, where it is heated by the fire and gains juiciness. Next, the pineapple is completely laid out on the wire rack and languishes in its own juice until half cooked. Then the pineapple is removed from the heat and cut into rings, which are fried and caramelized.
To make rice with chicken, juicy vegetables and chicken will need to be cut into thin strips and lightly fried, then add boiled rice. Then you need to fry everything until a delicious golden color and add fish and oyster sauces.
Delicate pancakes and turkey with honey sauce
On August 7 and 8, at the address: Dmitry Donskoy Boulevard, house 11, a special grill zone will work from 15:00 to 18:00. In addition to meat and fish dishes, it is used to prepare pancakes with various berry fillings and nut butter. Cooking takes a minimum of time. First of all, you need to knead the classic dough, then pour it onto the grill surface in small portions with a diameter of 10 centimeters and bake on both sides until tender. When serving the finished dish, add nut butter with cocoa and fresh berries.
On August 7, at the site, which is located at Teply Stan Street, possession 1b, they will cook a turkey with apples, pears and prunes with honey sauce. It is served with baked baby potatoes and fresh vegetables. The turkey stuffed with prunes is marinated for several hours in a soy-honey-garlic sauce, before baking, chopped apples and pears are placed inside. Spread orange slices on top, which are covered with honey glaze. The bird itself is placed in the center of the mold, and sliced apples are surrounded by it around the perimeter. The dish is baked in the oven for about an hour and a half.
